DAY ONE - TUESDAY EVENING
Welcome to Discover Heirloom Cuisine where your afternoon delight begins. A leisurely stroll as you are greeted by light faire foods cultivated and created in apple country - slip into the mood of heirloom cuisine. Stroll through the fruit orchard while sampling regional fruit. Glass of artisan cider in hand, your Tuesday evening continues with introduction to an array of seasonal selections while you join in to prepare our welcome feast. If the weather is fine, we will enjoy our appetizers outside, alongside the babbling Mission Creek, in the shadow of North Central Washington mountains within the famous Apple Capital of the World. Continue with private dining in Cider Mill Balcony for our multi-course meal. This will be your first sample of the exceptional flavors and aromas that you will be immersed in during your week at Discover Heirloom Cuisine.

DAY TWO - WEDNESDAY
Begin your day with a luxurious breakfast served by your hosts. Travel to heirloom garden, and fresh market tour, where luscious displays of locally produced ingredients await. Join your classmates in making the perfect choice for tonight's dinner menu. Depending on the season, there may be gorgeous bunches of asparagus, fresh garlic or basil, Swiss chard and tiny spring beets, or heirloom peaches, apples, or pears.Your picnic lunch served at a boutique winery, showcases the regional bounty and includes wine tasting with winemaker Warren Moyles of La Toscana

Now you will be in the mood to sight see and indulge in the area beauty. Seasons definitely change - so depending on summer, winter or fall - your recreational time may include white water rafting, kayaking the Icicle River, or winter snowshoeing through the fruit orchard.
Return to summarize all you have learned and put to use during our afternoon culinary workshop. We will discuss the importance of buying locally produced ingredients, and the importance of a relationship with growers and artisans. Our time will include a special chef demonstration as you prepare the evening dinner faire..

Welcome to the world of Lady Blush! This morning we will create bread and spread. The aroma will last in your memory as you create Lady Blush heirloom apple butter. Preservation techniques will be discussed, peeling, paring and coring heirloom apples, and the finer details on bread baking. Your very own jar of apple butter will be tucked into your personal gift shipper to enjoy back home. A visit to a local bakery or candy shop will complete the morning before our appointed picnic lunch spot.

Join the lively industry associated with growing tree fruit. Learn to hone your very own skills for orchard management, pruning techniques, responsible water management, and nursery choices. Special guest presenters share wealth of knowledge. Relax over lunch and reflect alongside the creek at the Cider Mill with chilled artisan cider, menu ingredients grown onsite.
